One of Belize News Post&#8217;s contributors recently fished off the shore of San Pedro. Although it has been noted that Belize&#8217;s water might be becoming over-fished, they still had a great fishing trip, and were privliged to eat what they caught. It is becoming increasing rare in our world to be able to catch and eat an animal, not wasting any part of it, and experience a cuisine that doesn&#8217;t get any fresher.</p>

<p><strong>Recipe</strong></p>
<ul>
<li><span style="font-size: 13px; line-height: 19px;">3 Fresh whole snapper (Red, Mutton, Mangrove, Black, Your Choice), gutted and washed (Rinsed in limed water). HEAD-ON.</span></li>
<li><span style="font-size: 13px; line-height: 19px;">After rinsing the fish in limed water be sure to let it sit for a minute or two on paper towel or something similar to remove any excess moisture to avoid the frying oil splashing. </span></li>
<li>Slice the fish diagonally about 1/4 of the way through the fish on each side. This will allow the fish to cook completely through and it will allow for better seasoning.</li>
<li><span style="font-size: 13px; line-height: 19px;">The fish seasoning is really simple: Seasoned salt and black pepper. For Belizean style fried fish: the seasoning is heavy on black pepper. The consistency you are looking is that of a light rub.</span></li>
<li>Use a cast iron pan for great results.</li>
<li>Pre-heat your frying oil, it&#8217;s essential the oil get hot enough to fry the fish quickly to avoid soaking in too much oil. There is some finesse to getting the oil heat just right. It needs to be hot enough to fry properly but not so hot that is burns.</li>
<li>In Belize there is not variety of oils available. My grandma uses vegetable oil or if heart attacks are not an issue and it can be found, coconut oil is a traditional option.</li>
<li>You need enough oil so that the fish are about half deep in the oil.</li>
<li>As the fish is frying use a spoon to keep hot oil moving over the sides and top of the fish.</li>
<li>The fish should cook in under 10 minutes. About 5 minutes a side. This does depend a little on the size of the fish and the number of fish you are frying at once.</li>
<li>Once the fish is fully cooked remove it from the oil and let is rest on a paper towel so remove the excess oils.</li>
</ul>
<p>Serve with <a title="Rice and Beans or Beans and Rice" href="http://www.belizenewspost.com/338/rice-and-beans-or-beans-and-rice/">Belizean Rice and Beans</a>, with a side of coleslaw or potato salad.</p>

				<content:encoded><![CDATA[<p>Belize News Post is happy and nostalgic to share this amazing recipe for Belizean &#8220;Powda&#8221; Buns. This recipe takes me way back to my childhood in Corozal and all the way back to standard 3. In Belize, schools are often underfunded and forced to come up with all kinds of schemes for staying afloat. My schools&#8217; fund raising included electing a class &#8220;king&#8221; or a class &#8220;queen&#8221; for every standard. One year I was elected. As &#8220;elected&#8221; class king/queen a large burden for raising class funds is placed on your back. Often these elections are rigged so that kids whose parents were perceived to be &#8220;rich&#8221; would get &#8220;elected&#8221;.  The idea is being, rich kids&#8217;, rich parents, would  support the class fund raising. My mom was having none of it. She unilaterally decided that if I were to be class king/queen I would raise the funds the old fashioned way: hard work. This is where powder buns come into the picture. My mom and I would bake a batch of powder buns every night and I would sell them at school. Lucky for me powder buns sell themselves. The combination of spicy nutmeg and cinnamon with a sugary sweet finish is irresistible. I would sell them every day at recess for $0.50 BZE. I always sold out.</p>
<ol>
<li><strong>Preheat your oven to 370 degrees.</strong></li>
</ol>
<p>If you are in Belize or have access to a coconut, your recipe can begin with cracking the coconut and griding out the meat. If you don&#8217;t, you can use store-bought coconut, but just keep in mind that it has added sugar. After using a machette or very large knife (use the back of the blade) to crack the coconut allow the coconut water to drain over a bowl.</p>

<p>Once the coconut is drained crack it all the way in half. If you have a coconut grinder you can grid out the coconut, if not (like us!) you can pick out the coconut meat carefully. Make sure that the coconut meat doesn&#8217;t have any bark on it.</p>

<p>Sift the 2 Cups of Flour and add the Margarine, mixing by hand until the mixture is crumbly.</p>

<p>Add in dry ingredients: Sugar, Raisins, Spices, Baking Powder, and ground Coconut.</p>

<p>Beat Eggs, Vanilla, and Coconut Milk. Combine wet ingredients with dry ingredients slowly. Final dough is moist and sticky. Use a spoon to drop large spoonfuls on a well-greased baking sheet and sprinkle generously with course brown sugar.</p>

We would leave a little early so that we could stop by the old market in Corozal Town, where his mother had a mini-diner. She was a very large, black, Garifuna woman. I can still remember her unorthodox method for making Belizean flour tortillas. Ms. Z would start with a little ball of dough but she would toss the dough high into the air and gradually spin out a perfect circle of dough. Her success rate was 100%.</p>
<p>What follows is a very simple recipe for making Belizean style flour tortillas, which on the whole, are generally thicker and less stretchy than Mexican flour tortillas.  They are also slightly more bread-like in texture and therefore well suited to be paired with <a title="Belize BBQ Chicken" href="http://www.belizenewspost.com/2042/belize-bbq-chicken/">BBQ chicken</a> or <a title="Belize Style Stew Beans Recipe" href="http://www.belizenewspost.com/1902/belize-style-stew-beans-recipe/">Belizean stewed beans</a>. Traditional Belizean flour tortillas are not well suited for making burritos because they lack the stretch required, however, if more fat is added, the tortilla will gain the  stretch required.</p>

<p>Mix the dry ingredients together with the butter until the dough is consistently crumbly. Slowly add 1 1/3 cup warm water (warm milk or warm coconut milk) while continuing to mix by hand. The end dough consistency should be soft, not-sticky dough that is ready to knead. Tip: Different types of flour need different types of liquid. Knead the dough for 5 minutes.</p>

<p>After kneading, shape the dough into small round balls and allow to rest to 15-30 minutes.</p>

<p>Now comes the hard part. We&#8217;ll suggest a couple short cuts below but a word of warning: forming tortillas is an art form. Ms. Z had her style, but more commonly in Belize, tortilla makers will press out a perfect circle of dough on a table using nothing but perfectly trained finger tips tapping round and round the dough to push out a circle. It&#8217;s harder than it looks to get perfectly round tortillas. When I was in home economics class I bribed a Mayan classmate to make my tortillas. Of course she had the advantage of waking up every morning and making two dozen flour tortillas for her family. Practice makes perfect.</p>
<p><strong>Short Cut</strong>: Either use tortilla press, or use a rolling pin roll out dough on a lightly greased surface. The tortillas cook quickly in the next step, so either roll out several yourself, or have a partner roll out dough while you cook.</p>

<p>Heat the Comal over medium heat. A comal in Belize is either cast iron, or these days it&#8217;s common to find a 1/4 inch thick slab of aluminum instead. It&#8217;s essential that the cooking surface is hot and stays consistently hot. Even heat is ideal. If the cooking surface is smoking it&#8217;s too hot. When the raw tortilla hits the surface it should start to cook immediately.</p>
<p>With the first side down, the uncooked side of the tortillas will start to bubble.  After a few bubbles have formed flip it and cooked the other side.  When both side have cooked flip it again, then using paper towel or cloth press down on the tortilla gently. This should cause the tortillas to bubble and form a pocket. This pocket is the sign of great Belizean flour tortilla. It takes some &#8220;feel&#8221; to get a tortilla just right. Taste a few tortillas until you get one right.</p>
<p><strong> Tip:</strong> Press down lightly on the center of the tortilla to allow it to &#8220;bubble up&#8221; in the middle.</p>

		<title>Belize BBQ Chicken</title>

<p><span style="font-size: 13px;">Red Recado (Recado Rojo) is an original mayan spice blend popular in Yucatan and Belize.  The most important ingredient, which is also responsible for the red color, is the annatto seed, the other spices are: Mexican oregano, cumin, clove, cinnamon, black pepper, all spice, garlic, and salt.</span></p>

<p>In the 29th minute Midfielder Trevor Lennen ran onto a ball at the top of the box, blasted a well placed shot past goalkeeper Denis Espinoza.</p>
<p>Nicaragua controlled the tempo and the ball for the vast majority of the game. But Belize&#8217;s defense played hard. Through the game their team communication in creole was clearly heard. </p>
<p>Belize led 1 nil at the half, but in the second half Nicaragua continued to dominate ball control and barrage of shots on goal eventually led to a late goal at the 85th minute. Belize&#8217;s superstar goalkeeper Woodrow West drew praise from the commentators for his adept ball handling. The one goal that got by him was the result of his defensemen being out of place.  </p>
<p>Belize held tight and never gave up hope. Constantly fighting off the Nicaraguan attack and playing for the long ball fast breaks. Deon McCauley caught up to one long ball with only seconds remaining in stoppage time and artfully squeaked the ball just inches past the fingers of the goalkeeper. </p>
<p>It was a glorious victory for Belize. The team demonstrated so much heart and great teamwork. Belize gameplay has a lot of areas that could be improved. But teamwork and heroic play are not among them. Belize has proved it is up to running against a better team for a full 90 minutes. And Belize has some real talent that can be very effective given a little space. </p>
<p>The victory was Belize&#8217;s first in the competition after 23 games. Nicaragua&#8217;s defeat extended its Copa winless streak to seven and eliminated it from contention.</p>
<p>Belize is now second in Group A on four points in Group A, two ahead of Guatemala. If Guatemala fails to beat Costa Rica, Belize will qualify for its first-ever Gold Cup.</p>

				<content:encoded><![CDATA[<p>This morning Belize News Post received an emailed attempt to gather confidential information regarding our possible Belize Bank online banking account information. This phishing email was easy for us to identify, but this post is word of warning to the less tech savvy. There were several give away indicators included in the email. The most obvious: Belize News Post does not in fact have a BelizeBank.com account! So any warning about an account cancellation is therefore totally bogus. Closer examination of the phishing email from &#8220;BelizeBank.com&#8221; revealed that the subject line was from &#8220;BelizaBank&#8221;. Note the &#8220;a&#8221;. Belize News Post also checked out the sender which appears to be a mass emailing marketing company not unlike constant contact or mailchimp. Nothing out of the ordinary. But when we checked out the link asking us to confirm or deny the cancellation of our Belize Bank account we were taken to a poorly constructed landing page that included a copy of the Belize Bank logo. To our experienced eye it was obviously a scam. But take this as a word of warning. An email sent to you asking for confidential information from a bank of any kind is more than likely a scam. Banks have very strict protocols regarding your account information safety and privacy and will NEVER ASK FOR YOUR INFORMATION IN AN EMAIL. </p>

				<content:encoded><![CDATA[<p>Bloomberg is reporting today that Belize&#8217;s debt burden is now the worst among emerging markets tracked by JPMorgan.</p>
<blockquote><p>“All eyes are on Belize to make the coupon payment,” said AJ Mediratta, a partner at Greylock Capital Management who is leading negotiations for a group of investors holding about $300 million in Belize bonds. “The country has the money to make this coupon payment. We know it is there.”</p></blockquote>
<p>According to Bloomberg Belize has $544 million of bonds and it&#8217;s looking like the Government of Belize will force it&#8217;s creditors to take a loss in any restructuring deal. Belize News Post is wondering how this news may be related to the GOB adding GST (tax) back on gas/diesel in Belize. </p>
<p>Belize’s dollar bonds have fallen 2.5 percent this month, the most among 52 emerging-market countries tracked by JPMorgan Chase &#038; Co’s EMBIG index. Brazilian and Indonesian bonds have gained 4.2 percent over the same period. Yields on Belize’s so- called superbond due in 2029 climbed 145 basis points, or 1.45 percentage point, to 20.08 percent this month as the country nears its second restructuring in five years.</p>
